Brazilian With Heart
The most basic Brazilian dish is elevated and becomes the main star at Rice ’n' Beans. These two ingredientes have their flavors enhanced with techniques that come from the Brazilian countryside. Responsible for this magic is the executive-chef Carlos Roberto Inácio. “I used to observe my mom cooking in (the Brazilian state of) Minas Gerais, so I learned how to cook in a different way, how to bring special seasoning to the dishes,” he explains. The result is represented in a traditional Brazilian cuisine with intense flavors of garlic, onion, tomato, and coconut.
For 25 years, Rice ’n' Beans has been one of the main Brazilian restaurants in New York.
